Liver With Peppers And Onions - cooking recipe

Ingredients
    1/2 c. flour
    1 tsp. salt
    1/4 tsp. pepper
    1 lb. liver, cut into bite size pieces
    4 Tbsp. vegetable oil, divided
    1 large onion, thinly sliced into rings
    1 medium green pepper, cut into 1-inch pieces
    1 sweet red pepper, cut into 1-inch pieces
    1 c. beef broth
    2 Tbsp. soy sauce
    1 Tbsp. cornstarch
    cooked rice or noodles
Preparation
    In a bowl, combine flour, salt and pepper.
    Add liver; toss to coat.
    Heat 2 tablespoons oil in a large skillet.
    Add onion and peppers; cook until crisp-tender.
    Remove from pan; set aside. Add remaining oil to the skillet.
    Cook and stir liver for 5 to 7 minutes, or until no pink remains.
    In a small bowl, combine beef broth, soy sauce and cornstarch; stir into liver.
    Cook and stir constantly until sauce thickens.
    Return vegetables to the skillet; cook until heated through.
    Serve over rice or noodles. Serves 4 to 6.
