Black Bean Quesadilla Sandwiches - cooking recipe

Ingredients
    1 (15 oz.) can black beans, rinsed, drained and mashed
    1 (4 oz.) can chopped green chiles, drained
    2 Tbsp. chopped tomato
    8 (6-inch) whole wheat tortillas
    4 oz. goat cheese, crumbled
    2 Tbsp. plus 1 tsp. chopped tomatoes
Preparation
    Combine beans, green chiles and 2 tablespoons tomatoes; stir well.
    Spread bean mixture evenly onto 4 tortillas.
    Top each evenly with goat cheese.
    Top with remaining tortillas.
    Place sandwiches on an ungreased baking sheet.
    Top each sandwich with 1 teaspoon chopped tomatoes.
    To serve, cut into wedges.
    Yields 4 servings.
