Nancy Reagan'S Rancho California Rice - cooking recipe

Ingredients
    1 c. chopped onions
    4 Tbsp. margarine
    4 c. cooked rice
    2 c. sour cream (fat-free)
    1 c. cottage cheese
    1 bay leaf, crumbled
    8 oz. canned chopped chilies
    2 c. grated Cheddar cheese
Preparation
    In a large skillet, saute onion in margarine until limp.
    Add rice, sour cream, cottage cheese and bay leaf.
    Mix together.
    In a buttered casserole, put layer of rice, then a layer of chilies, and 1/2 of the grated Cheddar cheese; repeat.
    Bake for 25 minutes at 375\u00b0.
    Yields 8 servings.
