Ingredients

1 c. dark brown sugar
2 Tbsp. all-purpose flour
pinch of salt
1 c. milk
2 egg yolks
1 baked 8-inch pie shell
2 Tbsp. butter
4 egg whites
1/4 tsp. cream of tartar
4 Tbsp. sugar
Preparation

Combine brown sugar, flour and salt in a double boiler.
Heat milk and slowly stir into flour and sugar.
Cook over boiling water until mixture begins to thicken.
Beat egg yolks in small bowl and stir about 1 cup hot milk mixture into egg yolks.
Combine the two mixtures in top of double boiler; add butter and cook until thick. Pour into pie shell.
Make meringue by beating egg whites and cream of tartar until stiff.
Gradually add 4 tablespoons sugar to whites and continue beating until it holds a peak.
Cover pie with meringue and bake at 400\u00b0 until brown.
