Confetti Rice Salad - cooking recipe

Ingredients
    1 c. cooked rice
    5 Tbsp. olive oil
    1 Tbsp. wine vinegar
    1 tsp. salt
    2 Tbsp. lemon juice
    1/2 Tbsp. dry mustard
    1 c. cooked or frozen peas
    1 c. cooked, diced carrots
    1 c. diced celery
    1 c. diced cucumbers
    1/4 c. sliced scallions
Preparation
    Add oil, vinegar, lemon juice, salt and mustard to hot rice. Stir in vegetables and season to taste.
