Raisin Zucchini Bread - cooking recipe

Ingredients
    2 medium zucchini
    2 c. sugar
    1 c. oil
    3 eggs, beaten
    1 Tbsp. vanilla
    3 c. self-rising flour
    1 Tbsp. cinnamon
    1 c. seedless raisins
    1 c. chopped walnuts
Preparation
    Finely shred zucchini to measure 2 cups; set aside.
    Cream sugar and oil.
    Add beaten eggs, zucchini and vanilla; mix well. Combine flour and cinnamon; mix well.
    Add raisins and nuts to dry ingredients.
    Combine with zucchini mixture; mix well.
    Makes 2 loaves.
