Chocolate-Cinnamon Angel Cake - cooking recipe

Ingredients
    1 1/2 c. egg whites (10 to 12 large eggs)
    1 c. sifted cake flour or sifted all-purpose flour
    1 1/2 c. sifted powdered sugar
    3 Tbsp. unsweetened cocoa powder
    1/2 tsp. ground cinnamon
    1 1/2 tsp. cream of tartar
    1 tsp. vanilla
    1 c. sugar
Preparation
    Bring egg whites to room temperature (about 1 hour). Meanwhile, sift flour, powdered sugar, cocoa powder and cinnamon together three times.
    Set aside.
    In a large mixer bowl, beat the egg whites, cream of tartar and vanilla with an electric mixer on medium speed until soft peaks form (tips curl).
    Gradually add the sugar, 2 tablespoons at a time, beating on high speed until stiff peaks form (tips stand straight).
    Transfer to a larger bowl, if necessary.
