Peanut Brittle - cooking recipe
Ingredients

2 c. sugar
1 c. light corn syrup
1 c. water
2 c. peanuts
1 tsp. butter
1/4 tsp. soda
Preparation

Combine sugar, corn syrup and water in a large heavy saucepan. Cook slowly, stirring until sugar is dissolved.
Cook to soft ball stage (238\u00b0).
Add peanuts and salt.
Cook to hard crack stage (300\u00b0), stirring constantly.
Remove from heat.
Add butter and soda; stir slightly.
Pour evenly into a well-greased shallow baking pan or cookie sheet.
Spread thin.
Cool partially by lifting edges with knife; when firm, turn the entire slab of brittle.
When cold, break into pieces.
Store at once in an airtight container.
Makes 2 pounds.
