Gretchen Mather'S Fresh Pickles(About 1 Quart) - cooking recipe

Ingredients
    3 medium cucumbers
    1 medium onion, finely chopped
    1 medium green pepper, seeded and finely chopped
    1 Tbsp. salt
    2 tsp. mustard seed
    1/2 c. white vinegar
    2/3 c. granulated sugar
Preparation
    Wash cucumbers and slice quite thin, about 1/16 of an inch. Place in stainless or glass bowl with onion and green pepper. Toss with salt and mustard seed.
    Let stand 1 hour.
    Drain off as much juice as possible without losing seeds.
    Mix vinegar and sugar while cucumbers are standing so that sugar is completely dissolved.
    Pour over cucumbers.
    Cover and refrigerate overnight. Serve with a relish tray or use as an ingredients in sandwiches.
