African Peanut Chicken Soup - cooking recipe

Ingredients
    2 onions, chopped fine
    2 large peppers, chopped
    3 to 4 garlic, minced
    2 Tbsp. vegetable oil
    1/4 tsp. black pepper
    1/2 c. long grain rice
    2/3 c. creamy peanut butter
    28 oz. Italian tomatoes, chopped (include juice)
    8 c. chicken broth
    1/4 tsp. dried red pepper flakes
    1 1/2 c. diced, cooked chicken
Preparation
    Cook onion, pepper and garlic until onions begin to brown. Add tomatoes, juice, broth and pepper (red and black).
    Simmer, uncovered, 1 hour; add rice and simmer 10 to 15 minutes until rice is tender.
    Add peanut butter, stirring until smooth.
    Add salt to taste.
    Makes 9 cups, 8 to 10 servings.
