Ingredients

1 c. sifted flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 stick butter
1 egg
1/2 c. honey
3/4 c. grated, raw carrots, firmly packed
1/2 c. quick cooking oatmeal
1/2 c. raisins
3/4 c. walnuts (medium size pieces)
Preparation

Sift together the flour, baking powder, baking soda and salt. Set aside.
In large bowl, cream butter; add the egg and beat. Beat in honey and then the carrots.
On low speed, add dry ingredients and then the oatmeal.
When thoroughly mixed, stir in raisins and walnuts.
Place dough by teaspoonfuls about 2 inches apart on cookie sheet.
Bake about 15 minutes at 350\u00b0.
Cookies are done when golden colored and the tops spring back if touched with fingertips.
