Swiss-Rosti - cooking recipe

Ingredients
    1 large Idaho potato per person
    cold water
    2 tsp. butter per person
    salt
    pepper
    onions, browned (optional)
Preparation
    Coarsely grate the potatoes into a dish of cold water.
    Brown butter lightly in a large heavy pan.
    Blot potatoes on a towel to dry them.
    Add to hot butter and press firmly with a broad spatula.
    Reduce heat and sprinkle salt and pepper to taste.
    Cook covered for about 15 to 20 minutes, until bottom of potatoes are cooked and golden brown.
    Turn into a hot serving plate, crusty side up.
    Serve immediately.
