Zucchini Relish - cooking recipe

Ingredients
    15 c. unpeeled and shredded zucchini
    1 large onion, chopped
    7 Tbsp. salt
    1 large green pepper
    1 large red pepper
    4 c. sugar
    2 1/2 c. white vinegar
    1 Tbsp. dry mustard
    1 Tbsp. turmeric
Preparation
    Mix zucchini, onions and salt; then drain.
    Then refrigerate for 2 hours.
    Take out and add to green and red peppers, sugar, vinegar, mustard and turmeric.
    Bring all ingredients to a boil and simmer 5 to 7 minutes.
    Seal while hot.
    Makes 6 to 7 pints.
