Ingredients

2 c. sifted flour
2 tsp. Clabber Girl
1/2 tsp. salt
2/3 c. shortening
1 3/4 c. sugar
1 egg
1 tsp. vanilla
3/4 c. well drained pineapple
1/2 c. finely shredded coconut
Preparation

Sift flour, baking powder and salt; cream shortening, sugar and vanilla.
Beat in egg until mixture is fluffy.
Blend in pineapple and dry ingredients.
Drop by teaspoon on ungreased sheet 3 inches apart.
Sprinkle with coconut.
Bake in a 325\u00b0 oven for about 20 minutes.
Cookies are better if stored 24 hours.
