Green Tomato Mincemeat - cooking recipe

Ingredients
    1 gal. chopped green tomatoes
    1 orange
    3 c. brown sugar
    1 c. grape juice or cider
    2 Tbsp. cinnamon
    1 tsp. nutmeg
    1 Tbsp. salt
    1 c. chopped suet
    2 c. seeded raisins
    2 c. apple or pear
    1 tsp. cloves
    1/2 tsp. ginger
Preparation
    Sprinkle chopped tomatoes with salt; let stand for 1 hour. Drain.
    Cover tomatoes with boiling water; let stand for 5 minutes.
    Drain.
    Add grated rind and pulp of orange.
    Mix together the remaining ingredients; cook until mixture is thick. Pack into sterilized jars and seal.
