Pear Preserves - cooking recipe

10 lb. pears
5 lb. sugar
1 lemon or lemon juice

Select hard green pears. Wash, peel and core. Slice thin and place in large pan. Add sugar and mix thoroughly with pears. Let stand 8 to 10 hours. Slice lemon thin, removing seeds, and add to pears. Bring to boil quickly over high heat, stirring constantly until sugar is dissolved. Boil rapidly, stirring frequently, until pears are transparent and syrup thickens. The cooking time will depend on the type of pears. Pour at once into hot sterilized jars and seal.
