Ingredients

2 pkg. Jell-O sugar-free vanilla pudding (cooked style, not instant)
3 to 4 bananas
6 egg whites, at room temperature
1 box vanilla wafers
Preparation

Prepare pudding according to package directions, decreasing milk by 1/2 cup per package.
After pudding is cooked, stir in vanilla extract.
(For richer flavor, use 1 cup milk and 1/2 cup canned evaporated milk per package.)
In large casserole dish, layer vanilla wafers, then banana slices, then 1/2 of pudding; repeat layers.
Beat egg whites with 2 to 3 packets Equal sweetener, to taste.
Pile meringue on top of pudding, spread to edge of pan.
Bake in hot (400\u00b0) oven very briefly, until meringue browns lightly.
Refrigerate.
