1 1/2 to 2 lb. lean stew beef
2 Tbsp. butter
2 onions, chopped
1 carrot, diced
2 Tbsp. flour
1/2 c. beef stock
1/2 c. wine*
1 Tbsp. parsley, chopped
1 small bay leaf
1 tsp. salt
1/2 tsp. black pepper
2 Tbsp. chopped celery leaves

*One part wine vinegar, 3 parts water and 1 tablespoon sugar may be substituted for wine.
