Stuffed Turkey Loaf - cooking recipe

Ingredients
    3 lb. ground turkey
    1 onion, chopped
    3/4 c. celery, finely chopped
    1/4 c. margarine
    3 c. packaged herb seasoned stuffing mix
    1 tsp. poultry seasoning (optional)
    2 eggs, well beaten
    1/2 c. water
    1/2 c. tomato juice
Preparation
    Brown onion and celery in margarine in frying pan.
    Combine with stuffing mix, poultry seasoning, eggs and water to make a stuffing.
    Add half of stuffing to ground turkey and mix well. Pat out half of meat mixture in two (1-quart) loaf pans.
    Spread with remaining stuffing, then top with remaining meat mixture.
    Pour tomato juice over loaves and bake at 350\u00b0 for 1 hour or until done. Serves 8.
