Glenna'S Sauerbraten - cooking recipe

Ingredients
    Beef roast, approx. 4 lbs. (chuck roast works well as do better cuts)
    1 to 1 1/2 pts. red wine vinegar
    3/4 c. water
    5-6 medium onions, sliced
    4-6 fresh bay leaves
    8-10 whole cloves
    12-15 peppercorns
    1 Tbsp. salt
Preparation
    While heating wine vinegar and water to just below boiling, place roast in large glass or earthenware bowl. Add remaining ingredients to roast. Pour vinegar and water mixture over roast and other ingredients. Place meat in refrigerator to marinate for approximately five days (at least three days). Being careful to not pierce the meat, turn the meat in the mixture with a wooden spoon twice a day.
