Southern Fried Chicken With Cream Gravy - cooking recipe

Ingredients
    1 (2 1/2 lb.) frying chicken, cut up
    1 tsp. salt
    1 c. all-purpose flour
    1 c. fat (all lard or 1/2 lard and 1/2 vegetable oil or shortening)
    2 Tbsp. all-purpose flour
    1 c. chicken broth
    about 1/2 c. whipping cream
    salt and freshly ground black pepper to taste
Preparation
    Wash chicken and pat dry with paper towels.
    Sprinkle with 1 teaspoon salt.
    Put 1 cup flour in a paper or plastic bag.
    Drop chicken pieces, 2 at a time, into bag.
    Shake until each piece is thoroughly coated with flour.
    Lay chicken on a sheet of waxed paper.
