Veggie Lasagna - cooking recipe

Ingredients
    1 (18 oz.) pkg. lasagna noodles
    2 (10 oz.) frozen spinach
    2 c. sliced fresh mushrooms
    1 c. grated carrots
    1/2 c. chopped onion
    1 Tbsp. oil
    2 (8 oz.) cans tomato paste
    1/2 c. sliced olives
    2 c. cottage cheese
    1 lb. Monterey Jack cheese
    1/2 c. fresh Parmesan cheese
Preparation
    Cook noodles in boiling, salted water for 8 to 10 minutes. Cook spinach; drain very well.
    Cook mushrooms, carrots and onion in oil until tender.
    Stir in tomato sauce, olives and oregano.
