Zucchini And Tomatoes With Basil - cooking recipe

Ingredients
    6 small ripe tomatoes
    2 medium zucchini
    4 small mild onions
    1 Tbsp. fresh basil or 1 tsp. dried basil
    1/4 c. olive oil
    salt to taste
Preparation
    Peel tomatoes; slice.
    Scrub zucchini and slice.
    Peel onions and chop fine.
    Put a layer of tomatoes in a shallow baking dish. Season with salt.
    Cover with zucchini and sprinkle with onions; salt.
    Cover zucchini with a layer of tomatoes.
    Season with salt. Pour oil over vegetables.
    Add basil to vegetables tucking it underneath tomatoes.
    Put in a prepared 375\u00b0 oven for 40 minutes or until vegetables begin to brown and juice cooks down a bit.
    A sprinkle of chopped fresh basil and parsley over vegetables at serving time makes it attractive.
    Can also top with Parmesan cheese.
