Chicken A La Special - cooking recipe
Ingredients

8 boned chicken breasts
1 1/2 tsp. salt
1/8 tsp. pepper
1/4 c. butter or margarine
4 to 6 medium carrots, cut in 2-inch sticks
2 pkg. frozen broccoli spears, cooked, drained
10 1/2 oz. can cream of chicken soup
2 Tbsp. flour
4 oz. can mushrooms (stems and pieces), drained
1/2 c. sour cream
Preparation

Bone and remove skin from the chicken breasts.
Sprinkle with salt and pepper.
Melt butter or margarine in large skillet.
Saute chicken until golden brown, about 15 to 20 minutes, turning occasionally.
Add carrot sticks, lifting chicken so the chicken is on top of the carrots.
Add 1/8 to 1/4 cup water.
Cover and steam for 50 to 60 minutes or until chicken and carrots are tender.
Ten minutes before chicken is done, cook broccoli according to package directions.
Drain.
Remove chicken to a warm platter or serving casserole.
Arrange carrots on ends of a large platter and the broccoli on the sides.
Put chicken in the middle, covering the broccoli stalks.
Keep warm.
