Fresh Mushroom Soup - cooking recipe

Ingredients
    1 lb. fresh mushrooms
    1/4 c. plus 2 Tbsp. butter
    2 c. chopped onion
    1 Tbsp. brown sugar
    1/4 c. all-purpose flour
    1 c. water
    1 3/4 c. chicken broth
    3/4 c. dry vermouth
    1 tsp. salt
    1/4 tsp. pepper
Preparation
    Slice 1/2 of mushrooms.
    Finely chop remaining mushrooms; set aside.
    Melt butter in a Dutch oven.
    Add onion and brown sugar. Cook over medium heat, stirring constantly, 15 minutes.
    Add all mushrooms and saute 5 minutes.
    Add flour, stirring until smooth. Gradually add water, broth and vermouth.
    Cook over medium heat until slightly thickened.
    Reduce heat and simmer 10 minutes. Stir in salt and pepper.
    Yields 6 cups.
