Zucchini Bread - cooking recipe

Ingredients
    3 eggs, well beaten
    2 c. sugar
    1 c. oil
    3 Tbsp. vanilla
    2 c. grated, uncooked zucchini
    1 orange rind
    coconut
    3 c. plain flour
    1/2 tsp. baking powder
    3/4 tsp. nutmeg
    1 tsp. salt
    1 tsp. soda
    3 tsp. cinnamon
Preparation
    Mix first 7 ingredients together and set aside.
    Sift together remaining ingredients.
    Mix the two mixtures and add one cup chopped nuts.
    Grease and flour 2 loaf pans.
    Divide batter between them and bake at 325\u00b0 for about 1 hour.
    Bread freezes well.
