Zucchini Bread - cooking recipe

Ingredients
    3 eggs, slightly beaten
    2 c. peeled, grated zucchini
    2 c. sugar
    1 c. oil
    2 tsp. vanilla
    1 tsp. baking soda
    1/4 tsp. baking powder
    3 c. flour
    3 tsp. cinnamon
    1/2 c. chopped nuts
    1 tsp. salt
Preparation
    Blend the first 5 ingredients well.
    Mix together the remaining ingredients; add to first mixture.
    Mix well.
    Bake in 2 loaf pans at 325\u00b0 for 1 hour, or until done.
    (I usually double the recipe, then make 3 loaves.
    Increase time.)
