Chicken Croquettes - cooking recipe

3 Tbsp. butter
1/3 c. flour
1 tsp. salt
1 c. milk
1/2 c. fine dry bread crumbs
2 c. cooked, chopped chicken
1 Tbsp. minced onion
2 Tbsp. parsley flakes
2 eggs
Preparation

Melt butter.
Blend in flour, salt and milk.
Cook over low heat, stirring constantly, until smooth and thick.
Add chicken, onion and parsley.
Spread in an oiled, shallow pan.
Chill thoroughly.
Divide into 8 portions.
Shape into logs.
With a fork, lightly beat the eggs.
Dip the croquettes in egg mixture and then in crumbs.
Fry until golden brown, 3 to 5 minutes, in cooking oil heated to 365\u00b0.
Drain on absorbent paper.
