Ingredients

1/2 c. shortening
1/2 c. granulated sugar
1/2 c. brown sugar
1 egg
1/2 tsp. soda
1 c. all-purpose flour
1/2 tsp. vanilla
1/4 tsp. baking powder
1/4 tsp. salt
1 c. quick-cooking oats
1 c. fortified whole wheat flakes
1/2 c. shredded coconut
Preparation

Heat oven to 375\u00b0.
Mix thoroughly the shortening, sugars, egg and vanilla.
Stir in remaining ingredients.
Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheet. Bake 10 minutes.
Immediately remove from baking sheet.
Yields 3 dozen cookies.
