South-Of-The-Border Vegetable Mix - cooking recipe

Ingredients
    1 medium onion, diced
    2 small green peppers, diced
    1/4 c. olive oil
    2 c. fresh corn, cut from cob
    2 zucchini, thinly sliced
    2 yellow squash, thinly sliced
    1 tomato, chopped
    1/2 c. water
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    Saute onion and green pepper in oil in a Dutch oven 2 to 3 minutes.
    Add remaining ingredients and bring to a boil.
    Cover, reduce heat and simmer 8 to 10 minutes or until vegetables are tender.
    Makes 8 servings.
