Potato Cakes - cooking recipe

Ingredients
    2 c. fresh or leftover salted mashed potatoes
    1 egg, beaten well
    1/4 c. chopped onion
    1/2 c. self-rising flour
    3 Tbsp. cooking oil
Preparation
    Mix together potatoes, beaten egg, onion and flour.
    With floured hands, make into patties.
    Fry in hot oil, turning to brown on both sides about 5 minutes per side.
    Makes about 10 to 12 cakes according to size.
