Joan'S Poached Salmon - cooking recipe

Ingredients
    clam juice
    1 c. white wine
    2 bay leaves
    2 to 4 lb. whole salmon, boned
Preparation
    In a poacher or roasting pan with wire rack, add enough clam juice and white wine, plus the bay leaves, to bring just about even with wire rack. Place fish on wire rack, cover with lid and place over medium heat to bring liquid to boil, then lower to simmer for approximately 25 to 30 minutes.
    Can be served hot or cold.
