Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1 small bell pepper
    1 small onion
    salt and pepper to taste
    1 egg
    3 Tbsp. Parmesan cheese
    1/2 c. Italian Progresso bread crumbs
Preparation
    Cook eggplant until tender.
    Beat up with mixer.
    Add bell pepper and onions that have been sauteed in margarine.
    Add egg, Parmesan cheese and half of the bread crumbs.
    Put in buttered casserole dish and add the bread crumbs to top.
    Bake 25 minutes at 400\u00b0.
