Chili Con Queso Soup - cooking recipe

Ingredients
    1 large onion, finely chopped
    6 Tbsp. butter
    3 (4 oz.) cans chopped chiles, drained
    4 (14 1/2 oz.) cans tomatoes, drained, seeded and chopped
    4 (3 oz.) pkg. cream cheese
    2 (14 1/2 oz.) cans chicken broth
    3 c. half and half
    8 tsp. lemon juice
    cayenne to taste
    salt to taste
    julienned tortilla strips, chopped
    green onions, chopped
    grated Monterey Jack cheese
Preparation
    Cook onion in butter until softened.
    Add chiles and tomatoes. Cook 8 to 10 minutes until liquid evaporates.
    Stir in cream cheese.
    Stir in chicken broth, half and half, lemon juice, cayenne and salt.
    Heat until warm.
    Sprinkle with tortilla strips, onions and Jack cheese over individual servings.
    Makes 8 cups.
