Cajun Chicken - cooking recipe

Ingredients
    1 Tbsp. margarine
    1 Tbsp. olive oil
    8 boned chicken breasts, halved
    1/2 c. white flour
    1/2 tsp. salt
    3/4 tsp. oregano
    1/2 tsp. thyme
    1/2 tsp. basil
    1/2 tsp. salt
    3 cloves garlic
    3/4 c. chopped onion
    2 stalks celery, diced
    1/2 c. chopped green pepper
    1 tomato, coarsely chopped
    1/2 tsp. paprika
    1/4 tsp. black pepper
    1/2 tsp. cayenne pepper
    1/4 tsp. white pepper
    2 Tbsp. olive oil
    1 (8 oz.) tomato sauce
    1 potato, diced
    2 bay leaves
Preparation
    Melt margarine with oil in shallow pan in oven 5 minutes.
    Coat chicken with flour and salt in bag.
    Bake chicken at 325\u00b0 for 25-30 minutes single layer.
    While cooking combine oregano, thyme, basil, salt, paprika, peppers.
    Saute in large fry-pan garlic, onion, celery, green pepper, tomato until soft.
    Mix seasonings, simmer about 1 minute.
    Mix in broth the tomato sauce.
    Bring to boil and simmer 5 minutes.
    Lower heat and add chicken breasts and potatoes. Cook until potatoes are soft and chicken is done.
