Vichyssoise Soup - cooking recipe
Ingredients

4 potatoes
1 block butter
3 shallots
Coffee Rich
salt and pepper to taste
Preparation

Peel potatoes and slice thin.
Put in a saucepan with butter and chopped shallots. Add enough water to cover.
Cook 1 hour over low heat.
When cool, blend in blender.
Add enough Coffee Rich to make soup as thick or thin as you want it. Add salt and pepper to your taste. This soup is served cold, but I prefer to heat it.
