Ingredients

2 lb. carrots
1/2 c. butter, softened
1/3 c. honey
2 tsp. coarsely grated orange rind
1/4 tsp. nutmeg
1/2 tsp. vanilla
Preparation

Peel carrots and cut into serving size pieces.
Cook carrots in boiling, salted water until just tender.
Drain.
While carrots are cooking, whip butter and honey together until light and fluffy.
Add orange rind, nutmeg and vanilla. Spoon glaze over carrots and toss well.
