Potato Bread - cooking recipe

Ingredients
    1/3 c. mashed cooked potato
    1 c. potato water
    1 Tbsp. yeast
    pinch of sugar
    1 1/2 tsp. salt
    1 Tbsp. oil
    3 1/4 c. unbleached flour
Preparation
    In a mixing bowl, stir mashed potato into the reserved water used to boil the potato.
    If the water is cool, warm it slightly. Sprinkle yeast over the potato water mixture to dissolve.
    Add the sugar, salt and oil.
    Beat in nearly all the flour.
    Place the dough on a flat surface and knead for 8 to 10 minutes, adding flour to prevent sticking.
    Place dough in an oiled bowl, turn over so the top is coated with oil, cover with a cloth and let rise in a warm spot until doubled in bulk (about 1 1/2 hours).
