Tom'S Mushroom Pate - cooking recipe
Ingredients

8 oz. mushrooms, chopped in processor
4 Tbsp. butter or olive oil
1 1/2 tsp. pressed garlic
1/4 c. scallions (whites only)
1/3 c. chicken stock
4 oz. cream cheese
2 Tbsp. fresh chives or green scallion tops
salt and ground pepper to taste
Preparation

Melt 2 tablespoons butter (or olive oil) in skillet and saute chopped mushrooms (2 to 3 minutes).
Add garlic and white scallion bottoms for 1 minute.
Add chicken stock and cook, stirring, over high heat until liquid is gone.
Cool to room temperature. Combine remaining butter or olive oil and cream cheese in mixing bowl.
Mix well.
Add cooled mushrooms and remaining ingredients. Put in covered bowl and keep chilled until ready to serve.
Serve with nice crackers.
