Eggplants-Marinated - cooking recipe
Ingredients

fresh eggplants
white vinegar
garlic
olive oil
salt
Preparation
-
Peel and slice thin.
Put in crock or glass container in layers with salt between layers.
Apply heavy weight for 24 hours. Pour out liquid and rinse well.
Return to container and cover with white vinegar.
Let set another 24 hours.
Squeeze out vinegar.
Add olive oil, minced garlic, oregano and crushed red pepper to taste.
Ready to eat or can be sealed in jar with oil.
