Sweet Potato Souffle - cooking recipe

Ingredients
    7 or 8 sweet potatoes
    2 sticks butter or margarine
    1 c. light brown sugar
    1 c. dark brown sugar
    1 tsp. salt
    1 c. evaporated milk
    1 Tbsp. vanilla
    3 egg yolks (save the egg whites)
    1 c. biscuit mix
    3/4 c. chopped pecans
    cinnamon and nutmeg (to taste)
Preparation
    Peel and cut the potatoes; boil in water until tender.
    Drain, mash and add one stick of butter or margarine, one cup of light brown sugar, the salt, evaporated milk and vanilla.
    Blend thoroughly, then fold in the egg yolks.
    Whip egg whites until stiff peaks are formed and fold into the potato mixture.
    Transfer to a large casserole dish.
