Cream Of Potato Soup - cooking recipe

Ingredients
    1/2 c. diced bacon
    1 1/2 c. diced onion
    1 1/2 c. diced celery
    1 1/2 qt. hot half and half
    6 c. diced potatoes
    salt and white pepper to taste
Preparation
    Cook potatoes ahead; save liquid and keep warm.
    Saute bacon, onion, celery; add hot half and half.
    Thicken with roux to desired thickness.
    Add potatoes and liquid, then salt and pepper.
    To garnish, sprinkle with paprika and chopped fresh parsley.
