Zucchini Relish - cooking recipe

Ingredients
    10 c. chunked zucchini
    4 large onions, quartered
    4 large green peppers
    4 large red peppers
    1/2 c. salt
    2 1/2 c. cider vinegar
    4 c. sugar
    2 tsp. cornstarch
    1 tsp. turmeric
    1 tsp. nutmeg
    2 tsp. celery seed
    1/4 tsp. black pepper
Preparation
    Grind the first 4 ingredients.
    Sprinkle with salt and let stand overnight.
    Drain and rinse thoroughly.
    In a large kettle, bring the remaining ingredients to a boil.
    Add the ground ingredients and simmer for 30 minutes.
    Process.
