Pork Chop Skillet Meal - cooking recipe

Ingredients
    4 Tbsp. shortening
    4 pork chops (1-inch thick)
    1 tsp. salt
    4 slices Bermuda onion, 1/4-inch thick
    4 rings green pepper
    4 Tbsp. uncooked rice
    3 c. stewed tomatoes
    1 c. diced celery
Preparation
    Melt shortening and brown pork chops over high heat.
    Brown well on both sides. Add salt.
    Place a slice of onion and 1 pepper ring on each pork chop.
    Place 1 tablespoon rice in each ring.
    Pour tomatoes over the meat; add celery.
    Cover and simmer for 1 hour.
    Yields 4 servings.
