Vegetable Quesadillas - cooking recipe

Ingredients
    2 zucchini
    2 summer squash
    handful of mushrooms, sliced
    1 large onion, diced
    2 bell peppers, chopped
    2 large tortillas
    mild Cheddar cheese
    butter
Preparation
    Saute zucchini, squash, mushrooms, onion and bell peppers just until crunchy.
    Layer 1 large tortilla on bottom of baking sheet, then cheese above vegetable mixture.
    Add more cheese and put tortilla on top.
    Brush with butter.
    Bake at 350\u00b0 for 10 to 15 minutes and slice pizza style.
    Makes 4 quesadillas.
