Zucchini Relish - cooking recipe
Ingredients

10 c. ground zucchini
4 c. ground onions
5 Tbsp. salt
2 1/4 c. vinegar
4 1/2 c. sugar
1 tsp. pepper
1 sweet green pepper
1 red pepper
1 Tbsp. nutmeg
1 Tbsp. dry mustard
1 Tbsp. turmeric
1 Tbsp. cornstarch
2 tsp. celery salt
Preparation

Put first 3 ingredients in large bowl; mix well.
Let stand overnight.
Drain and rinse well.
Put in large kettle with rest of ingredients; bring to boil and simmer, uncovered, stirring occasionally, for 30 minutes or until desired consistency.
Pour into jars while hot.
Makes 6 pints.
