Chichi Dango - cooking recipe

Ingredients
    1 (1 lb.) box mochiko flour
    2 1/2 c. sugar
    2 c. water
    1 (13 oz.) can unfrozen coconut milk
    1 tsp. vanilla
    1 tsp. baking powder
    3 to 4 drops red or yellow food coloring
    1 c. potato starch
Preparation
    Mix together all dry ingredients except for potato starch. Gradually add water, coconut, milk, vanilla and food coloring.
    Mix until there are no lumps.
    Pour mixture into a greased 9 x 13-inch or two 11 x 7 x 1 1/2-inch pans.
    Cover with foil and bake for 1 hour at 350\u00b0.
    Uncover and let it cool.
    Cut into desired pieces and roll into potato starch.
    Ready to eat.
