Zucchini Relish - cooking recipe

Ingredients
    10 c. zucchini
    2 c. green peppers
    4 c. onions
    1/2 c. red peppers
    1/3 c. salt
    1 tsp. turmeric
    1 tsp. celery seed
    1 tsp. curry powder
    1 tsp. pepper
    1 Tbsp. cornstarch
    4 c. sugar
    2 1/2 c. vinegar
Preparation
    Add salt to the first 4 ingredients and refrigerate overnight. Next morning drain and add turmeric, celery seed, curry powder, pepper and cornstarch.
    Place in jars.
    Simmer brine (sugar and vinegar) for 20 minutes and pour over relish in jars and seal.
