Simple Spanish Rice - cooking recipe

Ingredients
    1/2 c. chopped green pepper
    1 medium tomato, peeled, seeded and diced
    1/4 c. finely chopped onion
    1 Tbsp. vegetable oil
    1/2 c. uncooked long grain rice
    1 c. chicken broth
    1/2 tsp. salt (optional)
    1/4 tsp. pepper
Preparation
    In a saucepan, saute green pepper, tomato and onion in oil until tender. Add rice. Cook and stir for 2 minutes. Stir in broth, salt, if desired and pepper. Bring to a boil. Reduce heat. Cover and simmer 25 minutes or until rice is tender. Yield: 2 servings.
