Eggplant Tetrazzini - cooking recipe
Ingredients

1 eggplant
cracker crumbs
oil
Ragu sauce
Mozzarella or Provolone cheese
eggplant, cleaned and dried, cut in 1/2-inch slices
Preparation

Rub slices with oil and dip each slice in cracker crumb mixture or flour cornmeal mixture with garlic powder added and/or desired seasonings.
Place in oiled 9 x 13-inch pan.
Put on each slice approximately 2 tablespoons or more of Ragu slice covering top well.
Bake at 350\u00b0 for 20 minutes.
Remove from oven and cover tops with Mozzarella or Provolone cheese.
Bake 20 minutes more or until tender and brown.
Serve hot.
